1 tbsp cumin
1 dash pepper
1 dash salt
3 tbsps olive oil
1 1/4 lbs ground turkey
1/2 cup chunky salsa
3 tsps chipotle flavored hot sauce
1/4 cup cilantro, finely chopped
4 leaf medium boston lettuce
4 slices, medium tomato
4 oz shallots, finely chopped (1/2 cup)
1.Mix ground turkey (lean if available), 1/2 cup mild or medium chunky salsa, shallots, cilantro, 3 tablespoons oil, hot sauce, cumin, salt, and pepper in large bowl.
2.Shape turkey mixture into four 3 1/2 to 4″ diameter patties on wax paper.
3.Heat cooking spray in large non-stick skillet over medium-high heat.
4.Add burgers; cook until brown, about 3 minutes per side. Do not move around burgers until they have browned or they will fall apart.
5.Reduce heat to low. Cover pan and sauté burgers for 2 minutes.
6.Flip, and add a slice of low-fat cheese. Cover and sauté until burgers are cooked through and cheese is melted – another 2 minutes.
7.Arrange lettuce leaves on 4 plates. Top each lettuce leaf with a tomato slice and burger. If allowed, enjoy on a toasted whole wheat roll.
8.Note: these burgers freeze great – just put them between sheets of wax paper and throw them on the skillet for a quick and easy dinner! Also, you can try making 8 smaller burgers for kids or portion control.
