Low carb taco pizza


Turned out a good idea last night but am fine tuning it. Used a serving of Eden Organic Refried Beans but should have only used half a serving……..for the whole pizza.  I had just put the serving on half of it so I could see if just seasoned chicken with everything else on it would be good.  It was!  The side that had the beans was ok but it was just too much beans.  After figuring the nutritional values on this, it is more of either a heavy workout day meal or maintenance meal.  If you had just a 1/4 slice it would be 215 calories, 6.5 fat, 650mg sodium, 5.75 carbs, and 33.5g protein.  I’m not sure how well it would reheat so maybe you can use this when you have some friends over! Anyway, here is the recipe!

Ingredients:

1 Josephs Flax, Oat Bran and Whole Wheat Lavash Bread

2 shredded large skinless chicken breasts, cooked

1 cup of shredded 2% Mozzarella Cheese

3/4 cup of shredded lettuce

1/2 cup of diced cherry tomatos

2 servings of taco seasoning

4 servings of Mama Lupe’s Salsa

optional: 1/4 cup Eden’s Organic Refried Black Beans

Directions:

Preheat oven at 375

spray pizza pan with olive oil Pam

lay lavash bread on pan and lightly spray it to.

put in oven for 7 minutes

I put taco seasoning on shredded chicken, mix it together

pull out crust and if you use beans, spread first on crust

Add chicken, then sprinkle cheese on top

cook for another 7-8 minutes

put lettuce, tomato, and salsa on and your ready to go!

1 serving is a 1/4 slice in acute and 1/2 in maintenance.

The nutritional info is based on 1/4 serving.

w/beans: 229.5 calories, 6.7g fat, 7.12g carbs, 34.25g protein

wo/beans: 215.5 calories, 6.5g fat, 5.75g carbs, 33.5g protein
