Low Carb Jambalaya!


I saw an ad for this and thought I would try making some that works for me!

 

Ingredients:  1/2 cup minced onions

1 cup chopped green peppers

1 cup chopped celery

2 – 14 oz cans of diced tomatoes with basil, garlic and oregano (del monte)

1 pound turkey breakfast sausage

12 oz medium tail-off, peeled, deveined shrimp (Walmart frozen)  Hard to find fresh in Kansas LOL

1/4 teaspoon hot sauce

1/4 teaspoon pepper

1/2 teaspoon salt

1/2 teaspoon dried thyme

1 tablespoon dried parsley

Directions:  Add all ingredients except shrimp into crock pot

Cook on low for 6-8 hours or high for 3-4 hours

If shrimp is raw, add to crock pot for last hour if on low or last 30 minutes if cooking on high

If shrimp is already cooked, add during last 15 minutes
