How about a little rice?

Cauliflower “Rice”

If you want a rice for a recipe, here is an idea that is good for that!  Now, it wouldn’t be good for casseroles that your wanting the rice to absorb juices or sauce.

Put one head of cauliflower in a food processor and process using plain steel blade or shredder blade until it is the size of rice.

Microwave it in a covered dish. DO NOT ADD WATER! Makes a nice fluffy rice!
